JOB DESCRIPTION
TITLE:Chef De Partie/Commis Chef RESPONSIBLE TO:Head Chef/Second Chef/Third Chef RESPONSIBLE FOR:The Kitchen SCOPE:To ensure the smooth-running of the section you may be working in and maintaining the standards required by the hotel. DUTIES: 1. To prepare dishes as requested by the senior chef on duty to the standard required by the hotel. 2. To be aware of the accident procedure – (i) reporting, (ii) accident report book and (iii) first aiders. 3. To ensure correct storage of raw and prepared food stuffs. 4. To keep work areas clean and tidy at all times. 5. To have full knowledge of all equipment, it's use, operation and safety. 6. To report any equipment faults to the head chef. 7. To be fully aware of fire procedures of the hotel and the departments, (a) on discovering a fire and (b) on hearing the alarm. 8. To ensure the correct uniform is worn at all times and that it conforms to health and hygiene regulations. 9. To be aware of the need to improve knowledge and ask senior chefs for the relevant training and instruction. 10. To accept any additional duties as requested by the senior chefs. 11. To ensure all menu items are prepared correctly and that the highest quality and presentation factors are adhered to. 12. To ensure that the highest standards of safety are maintained in the use of knives in order to be of safety to yourself and others, and to ensure all knives are removed from the kitchen after each shift. 13. To be fully aware of the Food Safety Policy and ensure it is adhered to at all times. 14. To ensure that the correct preparation procedures of food products are adopted and consistently maintained. 15. To understand the responsibility to yourself, the hotel, other staff, contractors and any other persons who may come into the department in relation to the Health & Safety policy. 16. To fully accept the training programme of the department and to co-operate with the craft trainer. 17. To ensure that the section in which you work is kept clean and tidy at all times. 18. To offer suggestions on new menu ideas or operating improvements as you think of them. 19. To be aware of the departmental Health & Safety guidelines and ensure they are complied with. 20. To support the department Staff Committee member and contribute ideas. 21. To have full knowledge of all menus used in the hotel with regard to products, portions, presentation, preparation, accompaniments and cooking needs.
